Egg & Cheese quesadillas

There is nothing to it. You just make a scrambled egg. Microwave the tortilla for 10-15 seconds to make it flexible. Add a layer of cheese on half of the plate. Then add the ingredients; in this case they were egg, green onions, diced tomatoes & spinach leaves. (next time I intend to add diced red onions and maybe mushrooms because I think their texture goes well with egg).



The key is to not stuff the tortilla too much and when you fold it and put it on the pan, put a heavy object, a plate, another pan, anything on it, so the quesadilla comes out flat & all the cheese melted.
